A few words about the shrub:
Family: lamiaceae (60 cm high)
They like exposure to the sun
Compost helps it and can be added in spring, it does not need watering except at the time of planting (and if there is a strong drought)
We harvest as much as needed from October onwards.
The plant disappears in winter.
It is propagated by tubers (for storage in sand or directly in the ground during the winter).
The tubers are used in Asian and French cuisine and have been used medicinally to treat colds and pneumonia. Chinese artichokes are quite fibrous, consisting of carbohydrates, dietary fiber, and water. They are an excellent source of folate and vitamin K, and a moderate source of vitamin C, manganese, and magnesium.
Use the leaves in salads with lettuce and arugula.
