Ettinger is an avocado with green skin. Harvest maturity is reached early in the season, slightly ahead of the main Hass variety. It is a medium to large sized fruit with a shiny, smooth skin that can sometimes have a slight dimple. The flesh, when soft enough to eat, is pale green-yellow,
but can become mostly yellow with greater maturity. Ettinger has good density and excellent flavor with a clean mouthfeel. The stone is larger than those of many other varieties. The skin will break quite easily, but it can be peeled off without a problem.
Ettinger is considered a reasonably frost-resistant variety.
Ripening: Ettinger will ripen well in a fruit bowl at room temperature. The skin will remain green as the flesh softens, although some areas may darken slightly. The main indicator of ripeness is a distinct "gift" when you press the tip of the stem with your thumb.
